Savory Spud Salad with Goat Cheese

- 2 lbs, cut into small pieces red potatoes
- 3/4 cup olive oil
- 1/2 cup balsamic vinegar
- chopped green onions
- chopped parsley
- crumbled goat cheese
3 simple steps
- Coat potatoes in half of the olive oil and balsamic vinegar, add salt and pepper; arrange on a baking sheet
- Cover with tin foil, and roast for½ hour at 375°F
- Combine remaining olive oil, balsamic vinegar, and green onions; when potatoes are done, toss with other ingredients until goat cheese is creamy; serve immediately
